Peanut Butter Swirl Bars


Recipes with Rozzy: Episode 3! Peanut Butter Swirl Bars. 

These are so delicious and extremely easy to make. They only use 5 ingredients! If you own a food processor then it will save you a lot of time and effort. Otherwise you can use the good old fashioned method, a wooden spoon, a big bowl and some elbow grease! I used a 6 inch tin for this recipe. 

You will need....

90g Icing Sugar

95g Crushed Vegan Biscuits (I used Hobnobs)

65g Melted Vegan Butter

125g Peanut Butter

200g Dark Chocolate

Method...

First crush up your biscuits into fine pieces, (this is where the food processor comes in handy).

Pop the icing sugar into your food processor/ bowl, whizz up with the vegan biscuits, melt the vegan butter in the microwave or on the stove and add in and whizz until combined. It will be quite runny at this stage but don't worry.

Add in the peanut butter and whizz to combine, it will now resemble a dough! 

Pop the dough into a greased and lined 6 inch square tin (you can always double this recipe for a bigger tin) and press down until it is as flat and even as you can get it. Don't worry too much if it looks uneven, as we are going to cover it with chocolate anyway!

Melt your chocolate (I use the microwave and do it in 30 second bursts, stirring in between) pour over the base and spread evenly with a pallet knife. Melt a couple of tablespoons of smooth peanut butter until it is nice and runny. You then just want to drizzle this over the chocolate in random blobs, you can go a bit crazy here and make sure its up into the corners too. Then use a cake tester (or something similar) to create this swirled effect.  

When you are satisfied with how pretty it looks, pop it into the fridge to set for 1 hour and you are good to go!
